SRT-8 offers Side Air Bags as a seperate option, yet Dodge website, under "build" mode shows lesser models with available side airbags AND side air curtains. Why no air curtains on the SRT-8?

Side air bags and curtain air bags are the same thing.
I think the confusion is there are front and rear side-curtain airbags.
To quote from the brochure "Side-curtain for front and rear seats (Packaged in Protection Group)"

The Protection group is an option on all models except the SRT-8.
The side curtain air bags are an option by them selves on the SRT-8.

Yep, the terminology is a little screwy, and had me going for a while too. No seat mounted bags, only curtains. Which, as noted, are a standalone option on the SRT-8.
