Im wondering then why is it recommended to run 35v or even 32v

I dont know. Who recommends that? The one thing I dont really like about the 55w is it seems to take some time for the lights to reach their full brightness. Like they need warm up time. Also the color doesn't follow the temp chart like the 35w.
